If you like delicious organic food and want to experience the slow pace of life in a traditional Bulgarian village, you’ll love this week long exploration of growing and creating wonderful food.   Here, life is lived by the seasons and guests can join in making elderflower champagne or foraging for mushrooms in May to pickling and wine making in September.

Guests  join workshops through the week which include everything from slaughtering a pig, goat or chicken to making and sampling your own cumberland sausages.  Or make your own yoghurt and goat’s cheese, delicious on Wild Thyme’s freshly baked walnut bread.

One evening is spent with Maria learning to make traditional dishes of the village, after a morning archaeological walk.
Afternoons are free to relax or enjoy the local area.  There is lots to do in the area including visiting the World Heritage site of Sveshtari Tombs, an ancient tomb still in pristine condition or the wonderful painted monastries at Ivanovo, another World Heritage site.  For that extra bit of relaxation,  a reiki or massage therapy is available.




  • 3-4 hours tuition per day
  • Breakfast, lunch and dinner
  • Help yourself to selection of teas through the day
  • 6 nights accommodation based on twin share (or double for couples)
  • Non participating partners welcome
  • A morning excursion to archaeology site, led by archaeologist, Dr Chris Fenton-Thomas
  • Small groups with maximum of 5 people

9.30 Morning workshop/Wednesday – Archaeological guided walk

1.30 pm Lunch

2.30 Free time

7.00 Dinner/ Wednesday Local cuisine workshop starts at 5pm

Begins with evening meal on Sunday and finishes with breakfast on the following Saturday.

If you would like to go on an outing for the day, a packed lunch can be arranged.
